Cauliflower and Sausage Mac N Cheese

  • 1 packet pork crackle
  • 1 packet Dan & Steph Three Aussie Farmer Classics Aussie bangers, skin off
  • 1/2 head cauliflower, roughly chopped
  • olive oil
  • 1 onion, peeled & sliced
  • 400 ml milk
  • 1 pack dry macaroni  (we use gluten free low carb)
  • 100 g grated cheddar cheese
  • 3 eggs ( whisked )
  • 2 springs fresh thyme leaves


1. Preheat oven to 180c
2. In a large pot add the onion, cauliflower & milk – bring to a simmer and cook until cauliflower is soft
3. Cook the macaroni in a pot of boiling salted water according to the packet instructions & drain – add to a large bowl or pot & then with the sausage mince pinch it all apart & add 4 sausages to the pasta (leaving 2 sausages for the top)
4. When cauliflower is soft, carefully pour the mixture into the processor , add the grated cheese and blitz until super smooth, then season with salt & white pepper
5. Add the cauliflower sauce to the pasta – stir well & then add in the 3 eggs – stir really well then pour into a large casserole dish then top with the remaining 2 sausage pinches like little pieces of sausage mince & then with the pork crackle (break it all up in the bag) and sprinkle over the pork crackle crumb
6. Bake in oven for 30 minutes or until top is golden brown
7. To serve add a little fresh thyme leaves
