  • 1 Cup Chopped bacon
  • 2 Cups Frozen corn
  • 1 Red capsicum Chopped
  • 1/2 Cup Onion Chopped
  • 2 Tsp Fresh basil Chopped
  • 1/4 Cup Crushed peanuts
  • 2 Tbs Butter
  • 2 Tbs Maple syrup
  • 1/4 Cup Cream
  • 1/2 Tsp Salt
  • 1/4 Tsp Black pepper


  • Add the butter to a large pan over medium heat
  • Once the butter is melted, add the onion and bacon and cook for 3-4 minutes until soft
  • Add the corn and red capsicum to the pan and cook for 5-10 minutes – stir in fresh basil
  • Pour in the cream and maple syrup and season with the salt and pepper
  • Cook 5 minutes until the cream has reduced, then top with more fresh basil and peanuts and serve warm
