Corn Saccotash
Ingredients
- 1 Cup Chopped bacon
- 2 Cups Frozen corn
- 1 Red capsicum Chopped
- 1/2 Cup Onion Chopped
- 2 Tsp Fresh basil Chopped
- 1/4 Cup Crushed peanuts
- 2 Tbs Butter
- 2 Tbs Maple syrup
- 1/4 Cup Cream
- 1/2 Tsp Salt
- 1/4 Tsp Black pepper
Instructions
- Add the butter to a large pan over medium heat
- Once the butter is melted, add the onion and bacon and cook for 3-4 minutes until soft
- Add the corn and red capsicum to the pan and cook for 5-10 minutes – stir in fresh basil
- Pour in the cream and maple syrup and season with the salt and pepper
- Cook 5 minutes until the cream has reduced, then top with more fresh basil and peanuts and serve warm
