Ham Cheese Tomato Potato Bake

Notes

Olive oil
40g of butter
250g of chopped ham
2 tomatoes sliced 5mm thick
1kg of peeled spuds finely sliced
2 garlic cloves thinly sliced
400ml cream
50g grated cheddar cheese
30g grated parmesan
½ bunch of chives finely chopped
Salt and pepper
Method
Preheat oven to 160c and lightly grease a large oven roasting dish
Heat oil and butter in a pan and fry off the ham until crisp then remove from pan and allow to drain on paper towel
To the same pan add the potato , garlic and cream and season well , bring to the boil gently stirring for 8 minutes until potato is just starting to soften , remove from heat then gently place half the potato into baking tray then layer the sliced tomato to cover all the potato , gently place the rest of the potato on top of the tomato then cover with the cheeses
Bake for 25 minutes or until golden brown , remove from oven and allow to set but not cool completely before serving
