Korean Pork Bowl
Ingredients
PORK BELLY
- 1 kg pork belly
- 1 apple
- 1 onion
- 1/2 cup Gochujang (Korean fermented chilli paste)
- 4 tbs soy
- 3 tbs mirin
- 2 tbs chilli flakes
- 2 1/2 tbs brown sugar
- 1 1/2 tbs sesame oil
- 6 garlic cloves
- 3 inch piece of ginger
SERVE WITH
- Cooked brown rice
- Kimchi
- carrot
- sweet potato smash
- cucumber
- black sesame seeds
- fresh coriander
- chopped shallots
Notes
1. Slice your pork belly into 2cm x 2cm cubes & place into a large bowl
2. Process Apple, onion, garlic & ginger – add to bowl & then add all other ingredients – stir well to coat & then cover & marinade over night or for at least a few hours in the fridge
3. Preheat oven to 240 degrees & line a large baking tray
4. Pour the pork belly pieces & its marinade into the tray & place into the oven for 15-20mins – keeping an eye on it – you ideally want little charred (burnt) ends which will intensify its flavour
5. Remove from oven when cooked & make your own bowl with the ingredients you love
6. Be sure to take some of the cooking juices to pour over the pork & rice
