Mexican Stuffed Squid
Ingredients
- 500 g Cleaned squid Hoods
- 1 pkt Dan & Steph's and Three Aussie Farmers Farmhouse Sausages
- Dan and Steph's Mexican Rub or simple Mexican spice mix
- 1/4 cup Olive oil
Dressing
- 1/4 cup Olive oil
- 2 tbs Fresh lime juice
- 1 tbs Honey
- 1 tsp Minced chilli in adobo sauce
Salad
- 1/2 bunch Fresh mint Leaves picked
- 1/2 bunch Fresh coriander Leaves picked
- 2-3 tbs Pickled onions Recipe below
- 1 Cucumber Ribboned
- 1/2 tin Black beans Drained
- 1 Mango Finely diced
- Good handful of rocket
- Fresh jalapenos Finely sliced
Pickled onion
- 1/2 Red onion Finely sliced
- 1 cup Red wine vinegar
- 1/4 cup Brown sugar
- 10 Coriander seeds
- 5 Cumin seeds
Instructions
- Prepare your squid tubes by cleaning them well & patting dry
- Take the sausage mince out of the sausages & place into the bowl – add 2 tbs of mexican seasoning & mix well – stuff the squid tubes with this
- preheat the Ziggy BBQ on high heat & spray well with oil
- Rub some oil over the squid tubes & place onto hot grill to cook – turning regularly until the sausage filling is cooked
- Pickle onions – in a small saucepan add vinegar, sugar & the seeds – bring to the boil & then simmer until the sugar has dissolved
- Add sliced onion to the pickle liquid & sit until you’re ready to plate
- Meanwhile make the dressing by adding all ingredients into a processor & blend well, taste & season
- Pick herbs, slice jalepeno, ribbon cucumber & diced mango
