Nanaimo Slice
Ingredients
Base
- 1/2 Cup Chopped peanuts
- 115 G Unsalted butter Cubed
- 1/4 Cup Cocoa powder
- 1 1/2 Cups Desiccated coconut
- 1 Pkt Arnott arrowroots Or any biscuit you would like
- 1/2 Cup Brown sugar
- 1 Egg
Peanut Butter Filling
- 60 G Unsalted butter
- 3/4 Cup Peanut butter
- 2 1/4 Cups Caster sugar
- 2 1/4 Tbs Cornflour
- 2 Tsp Vanilla
- 4 Tbs Milk
Chocolate Topping
- 1 Cup Chocolate chips
- 3 Tbs Unsalted butter
Instructions
- Preheat Ziggy BBQ to low medium heat or the oven to 180 degrees C
- Prepare a square brownie pan with parchment paper including sides – long enough to grab to remove from tray
- For the base – In a food processor, add the peanuts & biscuits – process until fine
- Add the remaining ingredients and blend until the crust comes together and hold together when pressed
- Bake for 8 minutes – Remove and let cool completely.
- For the Filling – in the same processor – blend the butter and peanut butter together until smooth and fluffy – add the caster sugar, vanilla, milk and cornflour
- Beginning with the sugar mix, add to the peanut butter mix and alternate with the milk in two parts.
- Blend well until its looks like the consistency of thick frosting
- Spread the peanut butter filling over the cooled crust and refrigerate while you melt the topping
- For the Chocolate Topping – add the butter & chocolate to a small sauce pan & over low heat slowly allow to melt – when glossy & smooth – pour over the peanut filling
- Refrigerate until firm for 3hrs minimum
