  • 1 small bag of baby spinach
  • 4 English muffins
  • 1 avocado sliced
  • 1 pkt Dan & Steph Three Aussie Farmer "Farmhouse" sausages skins taken off
  • 1 tbs olive oil
  • 4 slices of cheese

Pesto Hollandaise

  • 250 ml hollandaise
  • 1 tbs pesto

Scrambled Egg

  • 4 free range eggs
  • 1/4 cup cream
  • 1/2 cup mozzarella grated
  • 1 tbs butter
  • salt & white pepper


  1. MAKE PATTIES – remove the skins from the sausages & squish together, then make 4 even patties with them – when time to cook add some olive oil in a hot pan & cook for 3 mins on each side until cooked through
  2. MAKE HOLLANDAISE – mix together pesto & hollandaise
  3. MAKE SCRAMBLE – in a bowl whisk together eggs, cream & salt & pepper together well – to a large pan on medium heat add butter until bubbling & add the scramble mixture – then sprinkle over the cheese – stirring well, cook until set & then divide into 4 in the pan
  4. TOAST MUFFINS – slice in half & toast muffins in a hot oven with cheese on to melt well
  5. BUILD MUFFINS – on top of the melted cheese add spinach, sausage pattie, scrambled egg, sliced avo & then pour over the pesto hollandaise then add the lid of the muffin
