Sausage Benedict McMuffin
Ingredients
- 1 small bag of baby spinach
- 4 English muffins
- 1 avocado sliced
- 1 pkt Dan & Steph Three Aussie Farmer "Farmhouse" sausages skins taken off
- 1 tbs olive oil
- 4 slices of cheese
Pesto Hollandaise
- 250 ml hollandaise
- 1 tbs pesto
Scrambled Egg
- 4 free range eggs
- 1/4 cup cream
- 1/2 cup mozzarella grated
- 1 tbs butter
- salt & white pepper
Notes
- MAKE PATTIES – remove the skins from the sausages & squish together, then make 4 even patties with them – when time to cook add some olive oil in a hot pan & cook for 3 mins on each side until cooked through
- MAKE HOLLANDAISE – mix together pesto & hollandaise
- MAKE SCRAMBLE – in a bowl whisk together eggs, cream & salt & pepper together well – to a large pan on medium heat add butter until bubbling & add the scramble mixture – then sprinkle over the cheese – stirring well, cook until set & then divide into 4 in the pan
- TOAST MUFFINS – slice in half & toast muffins in a hot oven with cheese on to melt well
- BUILD MUFFINS – on top of the melted cheese add spinach, sausage pattie, scrambled egg, sliced avo & then pour over the pesto hollandaise then add the lid of the muffin
