Spiced Sweet Potato Hotcakes
Ingredients
- 1 Pack 1 Noshu sugar free pancake mix
- 1.5-2 Cups Sweet Potato Purée (steam chopped sweet potato & purée till smooth or left over roasted)
- 2 tbs Ground Cinnamon
- 1 tbs Ground Ginger
- 1/2 tbs Mixed Spice
- 2 tbs Melted Butter or Nutalex
- dash Water
- Cinnamon Pecans
- 1/4 Cup Natvia sugar
- 1-2 tsp Ground Cinnamon
- Pinch of salt
- 1 Egg White
- 200 g Pecans – roughly chopped
- Serve with Peters Sugar free Vanilla ice cream
- 1 orange – zest only
- Pure maple syrup
Instructions
- Hotcakes – tip the noshu pancake mix into a large bowl – add spices
- Add sweet potato purée & melted butter – mix well – if still dry & not like a pancake mix add dashes of water until it becomes like a batter
- In a large fry pan add some butter or nutalex – cook hotcakes until cooked in middle
- Cinnamon pecans – in a bowl combine all ingredients – toss well to coat
- Pour out onto a line baking tray in a single layer & bake in 170 degree C oven for 20mins
- Remove from oven – allow to cool completely – crumble for plating
- Serve hotcakes with ice cream, maple, crushed pecans & then a zest of orange over the top
