Spiced Sweet Potato Hotcakes

Ingredients
  

  • 1 Pack 1 Noshu sugar free pancake mix
  • 1.5-2 Cups Sweet Potato Purée (steam chopped sweet potato & purée till smooth or left over roasted)
  • 2 tbs Ground Cinnamon
  • 1 tbs Ground Ginger
  • 1/2 tbs Mixed Spice
  • 2 tbs Melted Butter or Nutalex
  • dash Water
  • Cinnamon Pecans
  • 1/4 Cup Natvia sugar
  • 1-2 tsp Ground Cinnamon
  • Pinch of salt
  • 1 Egg White
  • 200 g Pecans – roughly chopped
  • Serve with Peters Sugar free Vanilla ice cream
  • 1 orange – zest only
  • Pure maple syrup

Instructions
 

  • Hotcakes – tip the noshu pancake mix into a large bowl – add spices
  • Add sweet potato purée & melted butter – mix well – if still dry & not like a pancake mix add dashes of water until it becomes like a batter
  • In a large fry pan add some butter or nutalex – cook hotcakes until cooked in middle
  • Cinnamon pecans – in a bowl combine all ingredients – toss well to coat
  • Pour out onto a line baking tray in a single layer & bake in 170 degree C oven for 20mins
  • Remove from oven – allow to cool completely – crumble for plating
  • Serve hotcakes with ice cream, maple, crushed pecans & then a zest of orange over the top
