Hotcakes – tip the noshu pancake mix into a large bowl – add spices
Add sweet potato purée & melted butter – mix well – if still dry & not like a pancake mix add dashes of water until it becomes like a batter
In a large fry pan add some butter or nutalex – cook hotcakes until cooked in middle
Cinnamon pecans – in a bowl combine all ingredients – toss well to coat
Pour out onto a line baking tray in a single layer & bake in 170 degree C oven for 20mins
Remove from oven – allow to cool completely – crumble for plating
Serve hotcakes with ice cream, maple, crushed pecans & then a zest of orange over the top
