Spiral Greek Sweet Potato Bake
Ingredients
- 3 large sweet potatoes pick similar thickness of them & leave skin on
- 3 tbs fresh rosemary chopped
- 1 tbs dried oregano
- 3 tbs olive oil
- 3 tbs butter or nuttalex
- 2 garlic cloves crushed
- pinch of salt & black pepper
TO SERVE
- Danish feta how ever much you like
- 1 tbs fresh parsley chopped
- 1/2 tsp honey
Notes
1. Preheat oven to 180 degrees C & coat a large fry pan or skillet with some spray oil
2. Melt butter & add to bowl then add olive oil, garlic, salt & pepper
3. Finely slice the sweet potatoes into 3mm slices (use a mandolin if you can) do one at a time
4. Toss the pieces on the butter mix & then line them up in your hands to make a spiral affect in the pan – continue with the sweet potatoes around the edges & then make a smaller circle in the middle
5. Pour remaining butter mix if you have any
6. Cover with foil & place into oven for 30mins
7. Uncover & increase oven temp to 220 degrees C – cook for a further 25mins
8. Remove from oven – top with danish feta, drizzle of honey & fresh parsley
9. Serve warm
