Strogonoff Meatballs
Ingredients
- 500 g Pork mince or the insides out of pork sausages rolled up into meat balls
- 1 tbs 1 tbs olive oil
- Salt Pepper
Sauce
- 60 g light cream cheese
- 150 ml light chicken stock
- 1 tbs Dijon mustard
- 1 tbs paprika
- 3 cloves garlic, grated
- 300 g mushrooms, sliced
- 1 medium onion, sliced thin
- t tsp white pepper
- 1 tsp salt
- Parsley to serve
Garnish
- Zucchini Ribbons
- Sour Cream
Instructions
- Make you meatballs by rolling them into golf ball sizes
- Then fry them off in a hot fry pan with some olive oil – remove from pan
- In same pan fry off onions & mushrooms until softened
- Add all other sauce ingredients & stir well – allow to simmer & reduce – taste & season
- Add your meatballs & allow to infuse & cook through
- Serve with zucchini noodles, fresh parsley & some sour cream
