Sweet Potato Banana Date Loaf (GLUTEN FREE)

  • 1 cup grated sweet potato
  • 1 1/2 cups almond meal
  • 1/2 cup coconut
  • 2 tsp gluten free baking powder
  • 1 1/2 tsp ground cinnamon
  • 1 cup chopped dates
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pistachios
  • 4 free range eggs
  • 1 tbs vanilla
  • 160 ml coconut oil
  • 4 over ripe bananas


  1. Preheat oven to 180 degrees – grease & line a loaf tin
  2. Whisk eggs, vanilla, coconut oil & mashed bananas together until doubled in size
  3. Add all dry ingredients into another bowl
  4. Combine the wet to the dry ingredients & fold together with a spatula
  5. Pour into loaf tin & bake for 35-40 mins, until a skewer comes our clean
  6. Remove from oven & allow to sit for 5mins then turn out onto cooling rack
Will last 3-4 days in the fridge

  1. Awesome recipe. Turns the usual cake recipes onto their head but it works. Also it freezes well when portioned for snack foods. Yum happy tum!
