Sweet Potato & Turmeric Loaf
Gluten Free & refined sugar free
Ingredients
- 300 g Sweet Potato mash
- 4 free range eggs
- 140 g cashew butter or peanut butter
- 60 g coconut oil
- 135 g almond meal
- 100 g slivered almonds
- 25 g pumpkin seeds
- 25 g sunflower seeds
- 15 g flaxseed
- 20 g sesame seeds
- 1 tbs ground turmeric
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 2 tsp baking powder
- pinch of salt
Notes
1. Preheat oven to 170 degrees C & grease and line a loaf pan
2. Whisk together the sweet potato, eggs, cashew butter & coconut oil until we’ll combined
3. Â Combine all the dry ingredients togetherÂ
4. Mix wet to the dry & pour into loaf pan
5. Bake in oven for 50-55min until cooked in the centre
