Finely dice all ingredients for the pico & add to a bowl – season & stir – allow to sit
Make the mango aioli by simply stirring together & adjust flavouring to add the puree to your taste
Slice lettuce, pick coriander & cut lime wedges
Make honey guac – smash the avo, add chopped coriander, lime juice & honey – season with a pinch of salt – stir well – taste. Adjust with more honey or lime juice to your taste
Preheat your Ziggy BBQ to high heat & spray well with oil
Stir together olive oil & Mexican spices
Slice your fish fillets into thick strips that will fit well on your tortilla – coat the fish with a brushing of spiced oil & place onto BBQ – cook 2-3mins on each side until cooked – this will depend on how thick your fish is.
Serve the coral trout on tortillas with lettuce, pico de gallo, mango aioli, honey guac & coriander.
