Preheat Ziggy BBQ to low medium heat or the oven to 180 degrees C
Prepare a square brownie pan with parchment paper including sides – long enough to grab to remove from tray
For the base - In a food processor, add the peanuts & biscuits – process until fine
Add the remaining ingredients and blend until the crust comes together and hold together when pressed
Bake for 8 minutes - Remove and let cool completely.
For the Filling – in the same processor – blend the butter and peanut butter together until smooth and fluffy – add the caster sugar, vanilla, milk and cornflour
Beginning with the sugar mix, add to the peanut butter mix and alternate with the milk in two parts.
Blend well until its looks like the consistency of thick frosting
Spread the peanut butter filling over the cooled crust and refrigerate while you melt the topping
For the Chocolate Topping – add the butter & chocolate to a small sauce pan & over low heat slowly allow to melt – when glossy & smooth – pour over the peanut filling
Refrigerate until firm for 3hrs minimum
