1. In a large fry pan add some olive oil & over high heat add the sausage meat only, discarding the skins
2. Brown off for a few minutes, breaking up in the pan with a wooden spoon
3. Add the garlic, onion & ginger – saute for 3-4 mins until the sausage meat is all cooked
4. Add the sweet soy, soy & sesame oil – stir well & allow to reduce the liquid until all soaked up
5. Build your sausage san choy bow – add sausage mix to a lettuce leaf, top with capsicum, chilli, coriander & a squeeze of lime
